Pork Collar (2 CT Butts)

$82.99

You don’t have to call the Pork Collar “the money muscle,” but it would help you fit in with the competition pit masters who love to use this intensely marbled cut that comes from the top of the shoulder via the natural seam between the blade and the under-blade. The fat cap is trimmed to the false lean, and the neck end is slightly squared. The versatile and succulent cut is excellent braised, cut into chops and grilled, or used for Italian “coppa.”

Two of our 3-4 pound CT butts

 *  All perishable orders placed Wednesday after 12pm EST through the weekend, will be shipped the following Monday.

Guys would love to review but at the moment I my Coppa's in the drying process. So once they are ready I would be happy to rate the quality. As far as what i received prior to my process it appears this is a great product.

Pork Collar (CT Butt)
5 Stars

I bought the 5 Pork Collar for $99 deal. Pork collar is an EXTREMELY hard cut to find in the U.S. It's usually used in sausage. It's very common in Europe and is commonly used to make grilled pork steaks. I bought these to make a German dish called schwenkbraten, which is typically served on a brotchen, or crispy bread roll. This was an amazing cut of meat, It had just the right amount of fat. It was fork tender. Oh, and it was some of the best tasting pork I've ever eaten. If you're trying to recreate the schwenkbraten you enjoyed in Germany, you can't do it without pork collar steaks. This is the pork collar you want to use.

I can’t believe the lack of reviews for these Pork Collars! I stumbled on these last year and just put an order in for 2 more 5 packs. These are so versatile... awesome Sunday roast pork with mashed potatoes in the winter, sliced pounded and fried pork chops and the best smoked BBQ pulled pork. The size is perfect for a family dinner or add a couple more to the pit for a party! Next I’m going to try carnitas and al pastor. Do yourself a favor and try these!
