Bacon Chocolate Chip Cookies

Ingredients:

Squeezable caramel sauce
1 egg
1 stick of unsalted butter
100g Brown Sugar
50g white Sugar
3g Salt
3g baking soda
5g Vanilla
80g semi sweet Chocolate Chips
170g Flour
Half pack Cheshire Pork bacon (8oz)

Directions:

Preheat to 375.

In the bowl of a stand mixer add the egg, butter, sugars, salt, baking soda and vanilla. Mix on low speed with the paddle attachment until combined, then mix on medium high speed until light and fluffy, about 3-5 minutes.

Add the chocolate chips and flour to the creamed butter and mix by hand until just combined. Then mix on medium to medium high speed with paddle attachment for 20 seconds. Remove bowl from mixer (don’t forget to take out the paddle!), cover and set in the refrigerator until you’re ready to scoop.

Lay bacon flat on a foil-covered, rimmed baking sheet, and bake for 8-10 minutes. The bacon should be underdone, as it will be baked again on the cookie. let cool, then cut the bacon into 1/2 inch pieces and set aside.

With a cookie scoop, scoop the cookie dough and roll the top part in the bacon pieces. If the dough is very cold, flatten the scoops just a bit with the palm of your hand. Place on an ungreased baking sheet 3 inches apart and bake for 14 to 16 minutes, until golden brown. Let cool for 10 minutes then drizzle with the caramel. If you have the willpower to wait, the cookies should rest until the caramel sets.
