You’ll find baby back ribs cut from high on the hog (literally and figuratively!), where the ribs and spine meet. Labeled “baby” only for being shorter than the St. Louis rib cut, these smaller ribs are also leaner. Additionally, we peel these racks so the pleural membrane is removed from the bone-side of the rack. You can find all the flavor on the meat-side.

These were some of the finest baby backed ribs I've eaten and were certainly the favorite for my family after cooking them on my pellet grill.
These are some of the best ribs I've smoked and grilled. The membrane on the back side, usually a royal pain in the you-know-what to remove, is very thin and usually crisps off in the grill. It doesn't impact the taste. The meat on these ribs is extremely good and sweet. I use these ribs in competition BBQ events.
