Our bone-in pork butts are packed fresh, skin off. The whole shoulder is separated from the middle by a straight cut between the fist and second rib, and the butt is separated from the picnic immediately atop the humoral/scapular articulation. A cross section of the blade bone is visible. The butt is trimmed to appear fairly square, with ¼ inch fat cover.
