Our bone-in pork butts are packed fresh, skin off. The whole shoulder is separated from the middle by a straight cut between the fist and second rib, and the butt is separated from the picnic immediately atop the humoral/scapular articulation. A cross section of the blade bone is visible. The butt is trimmed to appear fairly square, with ¼ inch fat cover.

I ordered two boneless pork butts for my family reunion they came packed in a nice cooler as soon as I opened it I said these are nice pieces of meat I slowed cooked them in the smoker for 12 hours they were so moist so tender everyone complimented the taste I can’t wait to try your briskets ... I have used pretty much all brands of pork for competitions. i was pointed in the direction of Heritage Farms when my pork scores were slipping. I ordered two packs of butts and could not have been happier. There is not need to inject these as the natural pork flavor is so pronounced you would be doing yourself a disservice in doing so.
