More tender than baby backs, due to a higher fat content, the St. Louis ribs are cut from the spare rib once the curved brisket section is removed. They are longer and not quite so curved as the baby backs, with an overall flatter, more uniform shape, making them a favorite contender among competition pit-masters.

I've used these St. Louis style ribs for smoking several times now and they are simply the best. There's really no comparison to these versus the one I purchased at my local meat market. While I've had some success with other online suppliers, we can definitely taste the difference in these Cheshire ribs. Just the perfect amount of fat to add great taste without being too fatty. Perfect ribs!
