More tender than baby backs, due to a higher fat content, the St. Louis ribs are cut from the spare rib once the curved brisket section is removed. They are longer and not quite so curved as the baby backs, with an overall flatter, more uniform shape, making them a favorite contender among competition pit-masters.

Best Ribs ever!
I've used these St. Louis style ribs for smoking several times now and they are simply the best. There's really no comparison to these versus the one I purchased at my local meat market. While I've had some success with other online suppliers, we can definitely taste the difference in these Cheshire ribs. Just the perfect amount of fat to add great taste without being too fatty. Perfect ribs!

We use Cheshire ribs for all our KCBS bbq contests. They always turnout amazing! The flavor and quality are the best and we have tried other brands, but continue to find Cheshire the absolute best! Try em... you won’t be disappointed!

St. Louis Ribs
I found these to be outstanding ribs. Most of the membrane had already been removed, so only a little cleanup was needed. The flavor was great, and the racks were very meaty. As for shipping, I had them sent 2nd day, which was probably not the best choice in the middle of summer. Even with them starting frozen and being packed with freezer packs and dry ice, a couple of racks had gotten soft by the time I received them. They were still extremely cold however, so I put them back into the freezer. During the summer, better to go with overnight shipping.
