High in oleic acid, the fat has a firm texture and a silky mouthfeel that sets our bellies apart from the rest. The skin, or rind is left on, and the belly is cut to a length of at least 19 inches. 10 pound slab average

Hat's off to this meat shop. The skinless pork belly was among the very best that I have worked with. It had an excellent meat / fat ratio and lean for pork belly. The flavor was fresh and an excellent flavor. This pork belly was used for making bacon and raves from the tasters on the quality of the pork. I will be back for more for another batch of bacon.
