Our bone-in pork butts are packed fresh, skin off. The whole shoulder is separated from the middle by a straight cut between the fist and second rib, and the butt is separated from the picnic immediately atop the humoral/scapular articulation. A cross section of the blade bone is visible. The butt is trimmed to appear fairly square, with ¼ inch fat cover.

Bone in Butt
Exceptional Pork Butts, great marbling and intermuscular fat. Well trimmed fat cap - only had to removed a little of the hard fat cap - minimal loss of overall weight. My only complaint - 2 pork butts per pack means I have to smoke both, which for my family size is overkill. I wish you could package them separately (Happy to buy two, just individually packed please?) Loss of a single star for that minor complaint, otherwise a 5 star product.
Bone In Butt
This is 2nd order of Boston Butts I’ve smoked from here and both cooks resulted in the best pulled/chopped pork I’ve ever done. Everyone came back for more and all stated that it was the best ever and non of the BBQ restaurants in town couldn’t come close to the taste. Family coming in from Texas for July 4th and I’m going to order 2 more to serve them. Service, shipping and quality are all that you want when you order something expecting it to be 5 stars. The Best… not even trying anywhere else.
