The petite boneless top loin roast is what’s left of the sirloin when the 10-rib rack is cut away, between the 14th rib and the first sacral vertebrae. We trim the fat to 1/8-1/4 inch so that each petite loin weighs three to four pounds each, then we individually vacuum pack them. This size is ideal for retail sale, cutting uniform boneless chops, or even just roasting whole in your own kitchen.
