The petite boneless top loin roast is what’s left of the sirloin when the 10-rib rack is cut away, between the 14th rib and the first sacral vertebrae. We trim the fat to 1/8-1/4 inch so that each petite loin weighs 1.5-2 pounds each, then we individually vacuum pack them. This size is ideal for retail sale, cutting uniform boneless chops, or even just roasting whole in your own kitchen.
