Our Kan Kan Chop began as the request of an adventurous chef and has continued intriguing our customers since. Though the original Puerto Rican version is around six pounds, ours is cut an inch and a half thick and weighs in at two to three pounds; it consists of a bone-in loin chop, with a strap of belly with the skin still attached. We’re still experimenting with the Kan Kan Chop—currently we like roasting them before crisping the skin in the fryer—and would love to hear more recipes (and see photos!) from chefs who buy this chop.

Purchased the Kan Kan chops for a cookout with friends, and the chops did not disappoint! High quality meat that turned out exactly as I'd hoped! The service at Heritage Cheshire was outstanding as well! I'd recommend them to anyone, and look forward to my next purchase!
