Cut from the picnic part of the pork shoulder, pork cushion is the isolated triceps brachia muscle complex. The tendons are trimmed flush with the lean, and there is a little fat cap left on one side. This cut is great for smoking, but don’t think of this as just barbecue! As a slow roast or a braise, the pork cushion triumphs on the table.
